Hygiene Manager – Food Safety & Sanitation Lead

About the role

The Hygiene Manager ensures the highest standards of food safety, hygiene, and sanitation across all hotel operations. Working closely with Culinary, F&B, Housekeeping, Engineering and HR, the role drives continuous improvement of the hotel’s HACCP system and compliance with local regulations.

Key responsibilities

• Develop, implement and regularly review food safety and hygiene policies.
• Maintain and monitor the hotel’s HACCP system, ensuring consistent compliance in all food‑handling areas.
• Conduct routine inspections of kitchens, restaurants, bars, storage, and staff areas.
• Monitor temperature controls, personal hygiene, and safe food‑handling practices.
• Identify risks, lead corrective actions, and perform internal audits.
• Deliver training and awareness programs on food safety and hygiene.
• Prepare accurate reports, documentation and record‑keeping for compliance audits.

Required profile

• Degree, diploma or professional qualification in Food Science, Food Safety, Hospitality or related field.
• Minimum 2 years of experience as a Hygiene Manager, Food Safety Officer or similar, preferably in a luxury hotel.
• Strong knowledge of HACCP principles, local food‑safety regulations and sanitation standards.
• HACCP certification or equivalent recognized food‑safety certification is highly preferred.
• Excellent written and spoken English.
