Purchasing Manager – Hotel Operations

About the role

The Purchasing Manager oversees end‑to‑end procurement and supply‑chain operations for a hotel in Doha, reporting to the Director of Finance. The role is responsible for sourcing, negotiating and purchasing all materials, food & beverage inventory, operating supplies & equipment and vendor services to ensure quality, regulatory compliance and cost control.

Key responsibilities

• Lead, train and manage purchasing, receiving and storeroom personnel.
• Develop and maintain procurement SOPs in line with corporate standards and audit guidelines.
• Build, evaluate and maintain strong vendor relationships, conducting supplier audits, quality reviews and price benchmarking.
• Manage purchasing across Food & Beverage, Rooms Division, Engineering, Spa and Administration, including competitive bidding, tender analysis and contract negotiations for supplies and capital expenditures.
• Monitor market trends and price fluctuations to optimise purchase timing and cost efficiency.
• Collaborate with the Cost Controller and Executive Chef on market lists, yield testing and recipe costing.
• Ensure purchase orders are authorised according to approval matrices and establish par stock levels to minimise waste and stockouts.
• Oversee receiving procedures, enforce HACCP and local health department regulations, and process credit memos for damaged or short‑shipped goods.
• Coordinate month‑end supplier reconciliations, resolve invoice discrepancies and prepare purchasing variance and vendor performance reports for senior management.

Required profile

• Proven experience leading procurement teams in a hotel or comparable hospitality environment.
• Strong negotiation and vendor‑management capabilities.
• Knowledge of local health department regulations and HACCP standards.
• Ability to work closely with finance, cost control and culinary teams.
• Detail‑oriented with the ability to enforce approval matrices and inventory controls.
