Chef de Partie – Sushi

About the role

The St. Regis Hotels & Resorts in West Bay, Doha is seeking a motivated Chef de Partie specialized in sushi to support the Sous Chef in delivering high‑quality, consistent dishes across buffet and à la carte services. You will work hands‑on in a fast‑paced kitchen while leading a small team of cooks.

Key responsibilities

• Supervise preparation and production of hot and cold sushi items, ensuring adherence to recipes and presentation standards.
• Maintain food safety, sanitation, and storage practices in line with HACCP, OSHA and local health regulations.
• Plan and manage daily food quantities, plating requirements and production prep lists for restaurant, banquet and pastry operations.
• Assist in developing seasonal menu items and estimating daily production needs.
• Train and coach kitchen staff to improve performance, quality and efficiency.
• Communicate production needs to key personnel and ensure smooth shift operations.

Required profile

• High school diploma or GED with at least 4 years of culinary experience, OR a 2‑year degree in Culinary Arts/Hotel & Restaurant Management with 2 years of experience.
• Proven ability to lead a kitchen team and maintain high standards of food quality and safety.
• Strong organizational skills and the capacity to work under pressure in a luxury hotel environment.
