Cost Controller – Hotel Finance & Procurement

About the role

The Cost Controller will oversee and optimise operational expenses for a hotel’s Food & Beverage and retail operations in Doha. Working closely with culinary, purchasing and finance teams, the role ensures inventory, purchasing and pricing align with budgetary targets and profitability goals.

Key responsibilities

• Calculate and monitor daily, weekly and monthly food and beverage cost percentages, establishing standard recipes, yields and portion sizes.
• Conduct menu engineering analyses to compare projected versus actual costs and identify pricing opportunities.
• Lead monthly and perpetual physical inventory counts for food, beverage, supplies and retail stock, investigating variances and performing spot‑checks at receiving docks.
• Maintain the inventory management system with accurate pricing, recipes and supplier data; review purchasing requisitions against forecasted occupancy and events.
• Analyse market trends and negotiate with suppliers to obtain better rates.
• Prepare monthly cost control, variance and reconciliation reports for the Director of Finance and present actionable recommendations.
• Participate in financial review meetings to discuss budget deviations and cost‑saving initiatives.

Required profile

• Bachelor’s degree in Finance, Accounting, Hospitality Management or related field.
• 3–5 years of cost control, storekeeping or purchasing experience in a hotel or high‑volume restaurant environment.
• Strong analytical mindset with attention to detail.
• Assertive communication style to enforce control procedures across departments.
