Head Pastry Chef – Lead Pastry Operations

About the role

The Head Pastry Chef oversees all pastry preparation, cooking, and presentation, ensuring products meet business needs and customer expectations.

Key responsibilities

• Collaborate with the line supervisor to set medium‑ to short‑term strategic priorities and ensure successful execution.
• Implement initiatives that maximise output and contribute to department goals.
• Plan and implement menu changes in consultation with the Head Chef, controlling food costs.
• Supervise all pastry preparation activities, maintain kitchen cleanliness and food‑safety standards.
• Manage inventories, purchases of food items, supplies and equipment, and coordinate maintenance.
• Build relationships with external suppliers to achieve cost control.
• Monitor KPIs, produce performance reports and take corrective actions as needed.
• Motivate and develop pastry staff, providing feedback and ensuring compliance with policies.

Required profile

• Minimum six years of experience as a Head Pastry Chef.
• High school diploma or equivalent relevant qualification.
• Well‑developed computing skills, including Microsoft Word, Excel, PowerPoint and ERP/Oracle systems.
• Knowledge of cooking techniques, team management, vendor relations, health and safety, and cost control.
