About the role

The Assistant Production Manager will support the Commissary Manager in overseeing daily food production at the Commissary Centre. The role ensures that all food products meet the highest quality, safety, and franchisor standards while being delivered on time to restaurants across the region.

Key responsibilities

  • Supervise day‑to‑day food production, enforcing quality, safety and franchisor protocols.
  • Control production volumes to avoid under‑ or over‑production and minimise waste.
  • Manage raw material and inventory flow, ensuring FIFO, proper storage, sanitation and waste reduction.
  • Oversee central kitchen operations, handling more than 100 metric tons of raw material.
  • Support new product development and recipe standardisation with franchisors.
  • Set and enforce procurement, storage and hygiene standards.
  • Maintain facilities, assets and equipment for efficiency and cost‑effectiveness.
  • Lead food safety management systems (ISO 22000, FSSC, HACCP, Codex Alimentarius) and embed food fraud prevention and defense practices.
  • Coordinate audits, documentation and compliance with municipal inspections and international standards.
  • Provide leadership, training and coaching to supervisors and frontline staff.
  • Identify process improvements and support scaling operations for future factory expansion.

Required profile

  • Bachelor’s degree in Veterinary Medicine, Microbiology, Agriculture or Food Technology.
  • 7–10 years of experience in food production, processing or commissary operations.
  • Proven track record leading large‑scale food production facilities.
  • ISO 22000:2018 and ISO 9001:2015 certified Lead Auditor.
  • Strong leadership presence and ability to manage production teams.
