Cold Kitchen Commis I – Hotel Kitchen Assistant

About the role

The Cold Kitchen Commis I supports the culinary team in a Pullman hotel, preparing and presenting cold dishes such as salads, appetizers, dressings, and buffet platters. You will work closely with senior chefs to ensure high standards of quality, hygiene, and service.

Key responsibilities

• Assist in preparing mise‑en‑place and presentation for salads, appetizers, dressings, and cold platters.
• Create buffet presentations and à la carte cold items.
• Maintain food quality, portion control, and plating guidelines.
• Ensure freshness, proper storage, and temperature monitoring of ingredients.
• Keep workstations clean and organized in line with HACCP and local regulations.
• Support senior chefs in daily operations and coordinate with other kitchen sections.
• Monitor and record refrigerator and cold‑room temperatures.
• Track stock levels and report shortages.

Required profile

• 1–2 years of experience in a similar cold‑kitchen role within a hotel or restaurant.
• Solid understanding of basic culinary techniques and food‑safety practices.
• Ability to work efficiently under pressure and follow instructions accurately.
• Strong teamwork, communication, and time‑management skills.
• Passion for culinary excellence and continuous learning.
