Dosa Master - South Indian Cook

About the role

A reputed restaurant in Qatar is hiring an experienced South Indian cook, referred to as a Dosa Master. The ideal candidate has strong expertise in authentic South Indian dishes, especially dosas, idlis, vadas, chutneys and sambar, and maintains high standards of quality, hygiene and presentation.

Key responsibilities

• Prepare and cook a wide range of South Indian dishes, including dosas, idlis, vadas, uttapams and other breakfast items.
• Make different varieties of dosas such as Plain, Masala, Mysore Masala, Ghee Roast, Rava, Onion, Cheese, Paper Roast, Set and specialty dosas.
• Prepare dosa batter and keep its taste, texture and fermentation consistent.
• Prepare chutneys, sambar and other South Indian accompaniments.
• Maintain food quality, portion control and presentation standards.
• Ensure proper storage and handling of ingredients, and keep the kitchen and cooking stations clean and hygienic.
• Monitor stock levels and report inventory needs.
• Follow food safety and sanitation standards at all times.
• Assist in menu development and introduce new South Indian dishes when required.

Required profile

• Minimum 3 years of experience as a Dosa Master, South Indian Cook or similar role.
• Experience in restaurants, hotels, cafeterias or catering establishments preferred.
• Indian nationality preferred; Muslim and Christian candidates are eligible to apply.
• Good teamwork, communication skills and a passion for authentic South Indian cuisine.

Required skills

• Strong knowledge of South Indian cuisine, dosa preparation, batter fermentation, chutneys and sambar.
• Understanding of food safety, hygiene and kitchen operations.
• Ability to work efficiently in a fast-paced environment and maintain quality during peak hours.
