Sushi Chef – Culinary Development Position

About the role

The Sushi Chef (CDP) will supervise and coordinate kitchen staff, ensuring that sushi and related dishes are prepared, presented, and served to the highest standards. This role combines hands‑on culinary expertise with leadership, overseeing food quality, decorative displays, and stock management in a busy hotel environment.

Key responsibilities

• Supervise cooks and kitchen workers, directing food presentation and decorative displays.
• Monitor portion sizes, garnish, and overall food quality, reporting any deviations.
• Maintain kitchen logs for food safety programs and manage inventory of supplies.
• Communicate menu specials and out‑of‑stock items to service staff.
• Assist with hiring, training, scheduling, evaluating, and coaching team members.
• Ensure compliance with safety policies, complete required certifications, and report incidents.

Required profile

• 4–6 years of relevant culinary experience, including at least 2 years in a supervisory role.
• Technical, trade, or vocational school education in culinary arts or related field.
• Physical ability to stand for long periods, lift up to 25 lb, and perform repetitive kitchen tasks.
