About the role
The Pastry Sous Chef will lead the pastry team in creating high‑quality pastries for all outlets, ensuring consistency, creativity, and guest satisfaction while managing day‑to‑day operations.
Key responsibilities
- Supervise and train pastry staff, lead shifts, and personally prepare pastry items according to specifications.
- Develop new pastry concepts, maintain food safety and storage standards, and control portion waste.
- Manage inventory, purchasing, and budgeting to stay within operating limits.
- Ensure compliance with all food & beverage policies, local regulations, and The Ritz‑Carlton Gold Standards.
Required profile
- High school diploma/GED with 4 years culinary experience, or a 2‑year degree in Culinary Arts/Hotel Management with 2 years experience.
- Proven ability to lead a team, maintain productivity, and foster a collaborative work environment.
Required skills
- Advanced pastry preparation and decorating techniques.
- Food safety and sanitation compliance.
- Inventory management and cost control.
