Junior Sous Chef – Latin American Cuisine

About the role

The Junior Sous Chef at La Mar will support daily kitchen operations, ensuring high‑quality Latin American‑inspired dishes are prepared and presented to guests. Working closely with the Head Chef and Sous Chef, you will help develop menus, train staff, and maintain food safety standards.

Key responsibilities

• Assist in managing day‑to‑day kitchen operations, maintaining consistency and quality of all dishes.
• Prepare, cook, and present Latin American‑inspired dishes with creativity and attention to detail.
• Collaborate with senior chefs to develop and update menus that align with the restaurant’s concept.
• Oversee training, mentoring, and performance of junior kitchen staff, fostering a positive team atmosphere.
• Ensure food safety, hygiene, and cleanliness standards are upheld at all times.
• Assist with inventory management, ordering, stock control, and waste reduction.
• Help manage kitchen costs, portion control, and operational procedures to meet financial targets.

Required profile

• Proven experience as a Junior Sous Chef or similar role in a high‑end restaurant or hotel, preferably with Latin American cuisine experience.
• Strong knowledge and passion for Latin American culinary traditions and contemporary techniques.
• Leadership abilities with experience in managing and mentoring kitchen staff.
• Exceptional organizational skills and ability to work efficiently in a fast‑paced, high‑pressure environment.
• Creative and innovative approach to menu development and food presentation.
• Excellent communication and interpersonal skills.
• Culinary qualification from a recognized institution is preferred.
