Director of Operations - Food & Beverage

About the role

The Director of Operations - Food & Beverage is the strategic, operational and commercial leader of the resort's culinary and beverage ecosystem. The role oversees 11 dining and drinking venues and a large conference, catering and gala banquet footprint, aiming for world-class guest experiences, strong revenue and departmental profitability.

Key responsibilities

• Set the strategy and positioning of all 11 venues, from fine dining and beach clubs to all-day dining and specialty concepts, and refresh seasonal menus, beverage programs and pop-ups with the Executive Chef and Head Sommelier
• Oversee large-scale banquet spaces, beachfront lawns and ballrooms for galas, summits, incentive groups and luxury weddings, working with the Directors of Sales & Marketing and Catering & Conference Services on yield-optimized packages
• Take full P&L responsibility, set budgets and CapEx forecasts, control COGS, labour margins and operating expenses, and drive beverage and average check growth
• Oversee procurement quality, supply chain, par levels and vendors, and establish SOPs and service standards to global auditing benchmarks
• Ensure compliance with health, safety, food handling, HACCP and hygiene regulations
• Build and train a team of hospitality professionals, run service academies, manage scheduling, productivity and succession planning

Required profile

• 8-10 years in senior luxury hospitality operations, including 3-5 years as Director of F&B or Director of Operations in a 5-star hotel or luxury resort
• Bachelor's degree in Hospitality Management, Business Administration, Culinary Arts or equivalent; Master's or executive certificates preferred
• HACCP certification required; WSET Level 2/3 or Court of Master Sommeliers certification preferred
• Proven track record managing multi-unit resort properties and high-volume banqueting
