Executive Sous Chef - Bakery & Pastry

About the role

Qatar Aircraft Catering Company (QACC), one of the world's largest flight catering facilities serving Qatar Airways, is hiring an Executive Sous Chef in Doha. You will lead, supervise and coordinate a large culinary team to deliver outstanding catering services, working closely with the Executive Chef and collaborating with Senior Management.

Key responsibilities

• Build a communication link between Sous Chefs and the Executive Chef so that required services are always provided.
• Schedule, assign, train, discipline and monitor cooks, stewards and purchasing staff; coordinate with unit supervisors and managers and plan the meal program.
• Maintain food portions, monitor cost controls, and ensure proper labelling and storage of food and supplies.
• Inspect equipment and facilities for safe use, maintenance and sanitation.
• Conduct internal production audits with Sous Chefs, covering chillers, freezers, storage areas and decanting rooms, and submit reports to the Executive Chef.
• Ensure food quality and recipes are followed, and train staff in new methods, techniques and procedures for fine dining preparation.

Required profile

• Bachelor's degree with at least 5 years of job-related experience.
• Strong knowledge of nouvelle cuisine, gourmet sauces, exhibition cooking and fine dining desserts.
• Ability to supervise and train a large, diverse staff and experience in a high-pressure environment.
• Awareness of current trends in the fine dining industry.

Required skills

• Good knowledge of food and beverages.
• Strong command of English and good computer skills in MS Office.
• Planning and supervisory skills.
• Basic food hygiene and HACCP skills.
