Commis 1 - Pastry

About the role

Raffles & Fairmont Doha invites you to join its pastry team as a Commis 1. You will support the pastry team in preparing and presenting high-quality pastries, desserts, breads and other baked products in line with the hotel's standards, working closely with Pastry Chefs and other culinary team members to ensure consistent quality, cleanliness and efficient kitchen operations.

Key responsibilities

• Assist in the preparation, baking, decoration and presentation of pastries and desserts
• Prepare ingredients and perform basic pastry techniques according to recipes and instructions
• Maintain high standards of food quality, presentation, hygiene and sanitation
• Keep pastry equipment, workstations and storage areas clean and organised
• Follow recipes, portion controls, production schedules and food-safety procedures
• Help with mise en place and daily pastry production
• Store ingredients and finished products properly to keep them fresh and of good quality
• Support the Pastry Chef and senior team members during daily operations and special events
• Minimise food waste through proper handling, storage and portioning
• Follow hotel policies, HACCP requirements and workplace safety standards

Required profile

• Previous experience or formal training in pastry or bakery is an advantage
• Culinary or pastry qualification is an advantage
• Good attention to detail and presentation
• Ability to work efficiently in a fast-paced professional kitchen
• Willingness to learn and take direction from senior chefs
• Good teamwork, discipline and hygiene practices

Required skills

• Basic knowledge of pastry techniques, ingredients and equipment
• Knowledge of HACCP requirements
