Sushi Chef – Doha, Qatar

About the role

The Sushi Chef will be responsible for preparing a full range of sushi items in a high‑volume, fast‑paced kitchen. You will work closely with the Head Chef and Kitchen Supervisor to ensure consistent quality, presentation, and food safety standards.

Key responsibilities

• Prepare sushi rolls, maki, nigiri, sashimi, temaki and specialty items following standardized recipes.
• Season and handle sushi rice to achieve the correct consistency and taste.
• Select, clean, fillet and portion fresh fish and seafood, maintaining excellent knife skills.
• Maintain hygiene, sanitation and HACCP standards in the sushi preparation area.
• Monitor stock levels, minimize waste and report shortages to the Kitchen Supervisor.
• Train junior sushi staff and assist with opening/closing procedures.

Required profile

• Previous experience as a Sushi Chef in a Japanese restaurant, hotel or similar professional kitchen.
• Strong knowledge of Japanese cuisine, sushi preparation techniques and fish handling.
• Excellent knife‑handling and fish‑cutting skills.
• Good understanding of food hygiene, HACCP and portion control.
• Ability to work efficiently in a fast‑paced environment and maintain consistent quality.
