About the role

As the Head Chef for Trader Vic's, you will lead the culinary team in delivering memorable dining experiences that reflect Hilton’s commitment to hospitality excellence. You will be responsible for overseeing all kitchen operations, from menu creation to cost management, ensuring each guest enjoys high‑quality food in a welcoming environment.

Key responsibilities

• Manage daily culinary operations, guaranteeing consistency, quality, and adherence to cost controls.
• Collaborate with the Executive Chef and F&B leadership to develop seasonal menus that incorporate current culinary trends.
• Oversee inventory, procurement, and vendor relationships to maintain cost efficiency while securing premium ingredients.
• Participate in P&L reviews, monitor food and labor costs, and implement strategies to improve profitability.
• Engage with guests and internal stakeholders to gather feedback and continuously elevate the dining experience.
• Supervise, coach, and develop kitchen staff, fostering a positive and productive work environment.
• Ensure compliance with health, safety, sanitation, and alcohol awareness regulations.
