Chef De Partie - Lebanese Restaurant

About the role

A hotel belonging to the Accor network, which operates more than 45 brands, 5,500 hotels and 10,000 restaurants, is looking for a full-time Chef de Partie for its Lebanese restaurant in Doha. The role covers preparing and cooking authentic Lebanese and Middle Eastern dishes and managing the day-to-day running of the assigned kitchen section.

Key responsibilities

• Prepare and cook authentic Lebanese and Middle Eastern dishes to approved recipes and standards, including mezze, salads, grilled meats, kebabs and marinades.
• Ensure consistent quality, taste, freshness and presentation of all food items, and follow portion controls and plating guidelines.
• Assist the Head Chef in developing new dishes, seasonal menus and daily specials.
• Manage the daily operations of the kitchen section, coordinate with other sections and make sure orders are ready on time.
• Maintain mise en place, monitor stock levels and rotate stock using FIFO principles.
• Keep food storage temperatures, labelling and expiry dates in check, prevent cross-contamination and comply with HACCP and hotel food safety procedures.
• Clean and sanitize equipment, utensils and workstations, report defects and accommodate special dietary needs and allergies.

Required profile

• Previous experience in a similar kitchen position, preferably in Lebanese or Middle Eastern cuisine.
• Strong knowledge of Lebanese culinary traditions, ingredients, spices, marinades and cooking techniques.
• Ability to lead a team, work under pressure and keep high standards during busy service.
• Good understanding of food safety, HACCP and kitchen hygiene standards.
• Strong organizational, communication and time-management skills.
